Fish and Brussel Sprouts

Ingredients:

1-2lb rockfish, snapper, cod, or mahi mahi
1-2lb Brussels sprouts
bacon
avocado
bacon grease, lard or coconut oil for cooking the fish
FISH:
Heat 1T oil in large frying pan over med-high. When oil is hot, put the fish in the pan and season with salt, pepper and dried dill. Cook for 5-6 minutes then flip the fish and cook for another 3. Fish is done when it flakes easily.
Veggies:
Trim the ends off of the brussel sprouts and shred in a food processor. Chop 3-4 slices of bacon and cook in a large pan for 3-4 minutes. Add brussel sprouts and cook 6-7 minutes stirring frequently so they don’t burn. You can add a spoonful of oil or some chicken broth if it looks too dry. Serve with 1/2 avocado per person and a slice of lemon.
If you don’t have a food processor, trim the ends off of the brussel sprouts and cut them in half. Line a cookie sheet with parchment paper or silpat and toss the sprouts with 2T of melted coconut oil. Sprinkle with salt and pepper and bake for 20 minutes at 350.
